Hot Cross Muffins

Happy Easter!

There are lots of foods I associate with Easter, one being the iconic hot cross bun and with the Easter weekend fast approaching you may want to give your little ones a treat. If you’ve got a mini me in the kitchen over half term, that might like to give baking a go, this recipe couldn’t be easier!

I looked into making homemade hot cross buns but it looked beyond my technical capabilities (I am slowly moving away from the woman who used to burn fish fingers but I’m still no cook)

So, it got me thinking, what can I cook that’s easy and similar to hot cross buns……

HOT CROSS MUFFINS!!!!!

You mix all the ingredients in one bowl (saving on washing up…..Brucy bonus) then cook them for just 20 minutes. WINNER!!!!!

All you need is

  • 300g Self-Raising Flour
  • 80g Brown Sugar
  • 1 tsp Mixed Spice
  • 1 tsp Cinnamon
  • 2 Eggs
  • 185ml Milk
  • 100g Melted Unsalted Butter
  • 200g Sultanas
  • Zest of 1 Orange

And THAT’S IT!!!!!!

You mix it all together, transfer into silicone cases and cook at 180°C until they’re brown, approximately 20 minutes.

To make the iconic cross, in a small sandwich bag, mix:

  • 4 tbl Icing Sugar
  • 2 tsp water

Cut a small hole in the bottom corner and pipe the cross onto the muffins….Ta-Da!!!!!

The little ones can enjoy these with a cup of milk but they sure do go well with a brew for the grownups!!!!
